There are 8 common varieties of "summer squash"?
How many have you tried?
1. Cousa - looks like a spaghetti squash but has edible skin and seeds.
2. Yellow Crookneck
3. Pattypan
4. Round Zucchini

5. Tatuma - looks like a pale zucchini but is sweeter and more flavorful.
6. Tromboncino - an Italian variety that gets over a foot long and is curved, well, like a trombone!
7. Zephyr - you might have seen one, looks like a zucchini that is half green and half yellow.
8. and last but not least....Zucchini!
Summer squash have tender skins, so no need to peel them before you cook them. The larger the squash, the larger the seeds, so it's up to you if you like to leave them in or if you prefer to remove them.
One of my favorites from my childhood is the Patty Pan squash. I remember my Granddaddy picking them by the bucketful. Typically Grandmother would slice and fry them but I've grown to love this recipe by Allrecipes for Pattypan Squash Pancakes as a bread alternative on the summer table.
