We are programmed to believe that we must be qualified before we step into our calling or into our dream.
We must check off all the steps and not embark on the journey until we are "ready".
Are you familiar with The Lost Kitchen? Some may have heard of it. Most, probably not.
It is one of the most exclusive dinner reservations you can make in the U.S. So you'd think that the chef would be a 4 star James Beard winner. Michelin stars adorning its fancy website. An exclusive high end staff properly trained to attend to guests' every need. A big city location in the most populous elite area.
No. Erin French, owner, has no formal culinary training. She doesn't even consider herself a chef. Her staff of women...their major qualification for landing their job? Heart. They learned the rest as they went. And the location? In an old mill, in the middle of nowhere Maine. And...they are only open 6 months out of the year. You cannot make a reservation by phone. Nor by email. Only by postcard. And then it is a lottery system.
So how could someone with no training, no formally trained staff, no high end location and no means to make a reservation other than snail mail ever have such a wildly successful restaurant when she defies all the "have to have's and be's"? Her goal is not to provide her guests with the best culinary experience they have had. It is to provide them with the best experience, that happens to involve food. Her guests are her focus. Erin has the heart to serve others. All the rest can be learned. Don't let the naysayers and know-better-thans dictate your future. You don't have to be qualified before you step out. You don't have to be fully prepared.
You just have to be willing. And to have a heart to serve others.
