Misfits Market ~ CHOPPED!

Earlier this year I started a subscription to Misfits Market. Very timely as we'd received 1 box before the world shut down around us. It has been a relief to have fresh veggies arriving bi-weekly and left on our front porch. I joined a group online and in that group we had a "Chopped Challenge" using box ingredients + a mystery ingredient.

If you aren't familiar with Misfits Market, they 'rescue' fruits, veggies, pantry staples that might be a bit 'special' in some way. It might be too big, too small, a little misshaped. All good, all certified organic and non-GMO. Just saving it from a fate of the trash or compost because big box retailers won't take it.

Back to the group 'Chopped Challenge'. We had 4 mandatory ingredients and 1 challenge ingredient that had to be in our recipe/dish. The mandatories were items typically found in a Misfit's box. For this challenge they were:
Dark Leafy Greens -- either Kale, Collards or Mustard greens
An Apple --any variety
A Potato -- white, red, or sweet
Onion -- any variety
and Dijon mustard was the challenge ingredient.

My first thought was to do a hot, baked dish along the lines of a potato gratin. Hubby thought of my Kale Salad that he loves. So...
I went with his favorite. Because that's how we roll.
I added almonds, orange and cranberries to the mandatory ingredients.
The twist for making my salad was that potato that had to be included. The air-fryer helped me out with that though!
Misfits Chopped Challenge Kale Salad
Mandatory ingredients:
Apple -- 1 peeled, cored, diced
Kale –small bunch washed, dried, chopped
Potato –washed, spiralized
Onion – ¼ cup diced
Dijon Mustard –1 Tablespoon
Additional Ingredients:
2 oranges, juiced
¼ dried cranberries
¼ chopped almonds
¼ olive oil
Salt/pepper to taste
Blend orange juice, olive oil, Dijon mustard, salt and pepper. Set aside.
In large bowl, mix kale, apple, onion, cranberries and almonds. Pour ½ of dressing over kale mixture and toss. Set aside for at least 30 min – hour.
Place spiralized potato (or sweet potato) in air fryer…air fry until crispy and golden but not burned. You may toss in a little olive oil if you wish. Let cool.
Sprinkle your crunchy air-fried potatoes on top of your salad just before serving.

I suppose I should rename it My Almost Award Winning Kale Salad. Yep. I came in 2nd place. Right behind some righteous looking Sweet Potato Gnocchi. Can't complain about that at all.
